Whipped Feta and Crudités

Crudités are extremely versatile and can be served at dinner parties or BBQs. The classic carrot can be easily replaced with radishes, tenderstem broccoli or asparagus

INGREDIENTS

For the crudités

2 eggs
200g green asparagus, trimmed
200g spinneysFOOD Tender Stem Broccoli
4 seeded mini baguettes
150g spinneysFOOD Cherry Tomatoes on the Vine
200g spinneysFOOD Baby Radish, trimmed
200g spinneysFOOD Celery Sticks

For the whipped feta

200g feta, crumbled
10g spinneysFOOD Fresh Dill, roughly chopped
1 tbsp olive oil
3 tbsp cold water
1 tsp red peppercorns
1 clove garlic, peeled and crushed
½ lemon, juiced
spinneysFOOD Salt, to taste
spinneysFOOD Fine Black Pepper, to taste

METHOD

    Boil the eggs for 7 minutes before placing them in a bowl of iced water to cool

  • 2

    Once cooled, peel the eggs and slice them in half

  • 3

    Blanch the asparagus and tenderstem broccoli for 1 minute before placing them in a bowl of iced water

  • 4

    For the whipped feta, add all of the ingredients to a food processor and blitz until completely smooth

  • 5

    Transfer to a bowl and drizzle with olive oil

  • 6

    Place the bowl of whipped feta on a platter or board. Serve with the eggs, asparagus, tenderstem broccoli, mini baguettes, cherry tomatoes, radishes and celery sticks
