INGREDIENTS

250ml spinneysFOOD Honey
500ml heavy cream
1.5L spinneysFOOD Baklava & Cinnamon Ice Cream
750ml full-fat milk
8-10 pieces store-bought baklava + 6 extra for garnishing

METHOD

    Place the honey in a saucepan over a medium heat and cook until it starts to darken

    Slowly pour in the cream and whisk to combine

  • 3

    Cook for a further 3-4 minutes

    Remove from the heat and pour into an airtight container. Allow the mixture to cool in the fridge

  • 5

    In a blender, blitz ½ cup of the burnt honey mixture, ice cream and milk until smooth, add the baklava pieces and give it a quick blitz, leaving some chunky pieces

  • 6

    Pour the mixture into the 6 glasses, garnish with a drizzle of burnt honey and a piece of baklava
