For the Apple Butter

200g salted butter
200g spinneysFOOD Extra Fine Caster Sugar
8 apples (1.2kg), peeled, cored and chopped
1 tbsp vanilla extract
½ tsp cardamom
½ tsp spinneysFOOD Fine Cinnamon
1 lime, juiced

For the Apple Roses

1 lemon
Leftover apples (half of one per rose)


  • For the Apple Butter

    In a medium, high-walled pan, melt the butter and sugar together and cook on a medium heat until caramelised. The sugar and butter may look as though they have split, but don’t worry – the mixture will come together

    Add the apples, vanilla, spices and lime juice. Stir to cover completely

  • 3

    Place a lid on the pot and cook for 20 minutes or until the apples have broken down

  • 4

    Remove the lid and cook the sauce, stirring until it thickens and all the liquid has evaporated

    Decant the apple sauce into sterilised jars and seal securely

  • For the Apple Roses

    Prepare a medium bowl of water and squeeze in the juice of 1 lemon

  • 2

    Halve an apple and very finely slice it from the base using a mandolin, so you get thin semi-circles. Leave them in the lemon water to prevent them from turning brown

    Arrange the apple slices in a line, overlapping the ends slightly. Starting from one end of the line, roll up the slices as tightly as possible, adding more slices until you achieve the desired size of rose

    Use to garnish tarts, desserts or even breakfast dishes


6 Ways to Enjoy Apple Butter

  1. Whisk 2-3 tablespoons of apple butter into your French toast egg mixture for an apple pie flavour
  2. Make a sweet and spicy baste for chicken by combining ½ cup apple butter with ½ cup whole grain mustard, 1 tsp smoked paprika, juice of 1 lemon and salt and pepper
  3. Soften a tub of vanilla ice cream and swirl with ½ cup of apple butter. Top with crushed shortbread or ginger biscuits
  4. Spread a generous amount of apple butter on toast and top with whipped ricotta, slices of apple and honey
  5. Have it for breakfast with some yoghurt and granola
  6. Substitute salted butter for apple butter when making the topping for a fruit crumble
