Turkish Delight Ice Cream Lollies

Traditionally known as a sweet for special occasions, we've turned this long-standing favourite into a mouth-watering dessert

For the ice cream

600ml double cream
1 tbsp rose water
100g Turkish delight, finely chopped
1 tin (397g) sweetened condensed milk
200ml cream, whipped

For the dark chocolate dip

200g good-quality dark chocolate, chopped
160g odourless coconut oil
Rose petals and edible gold leaf, to decorate

    To make the ice cream, whisk the double cream, rose water, Turkish delight and condensed milk together until smooth and thickened slightly

    Fold in the whipped cream, then pour the mixture into lolly moulds. Insert wooden popsicle sticks and freeze for about 4 hours or until firm

    Then make the dip by melting the dark chocolate and coconut oil together in a saucepan over gently simmering water until runny and smooth. Allow to cool slightly before pouring into a jug, to allow for easy dipping

    Dip the ice cream mould briefly in hot water to remove the lollies, then dip each lolly into the melted chocolate

    Place them on a tray lined with baking paper, decorate with rose petals and pistachios and put them quickly back into the freezer until firm


Top Tip: Change the flavours of the ice cream lollies by swapping the rose water for flavourings such as pistachio, hazelnut or orange blossom
