INGREDIENTS

For the chilli salt

2 tbsp spinneysFOOD Sea Salt Flakes
½ tsp spinneysFOOD Fine Paprika
½ tsp spinneysFOOD Crushed Chilli
½ tsp spinneysFOOD Fine Cayenne Pepper

For the chickpea potatoes

2 large potatoes, thickly sliced or cut into cubes
Canola oil, for frying
105g chickpea flour
3 tbsp rice flour
3 tbsp cornflour
½ tsp spinneysFOOD Fine Paprika
¼ tsp bicarbonate of soda
1 tsp spinneysFOOD Salt
125ml spinneysFOOD Bottled Water

METHOD

    To make the chilli salt, combine all the ingredients in a small bowl and set aside for serving

    Bring the potatoes to a boil in salted water and parboil for 3 minutes (they should not be fully cooked). Drain and set aside

  • 3

    Heat a large pot of oil to 180°C

  • 4

    Whisk together the chickpea flour, rice flour, cornflour, paprika, bicarbonate of soda, salt and water in a medium bowl until smooth

    Dip the potatoes in the batter and immediately into oil. Do this in batches. Leave the potatoes to cook for 5-10 minutes or until golden and crisp

    Drain on a paper towel and serve immediately with chilli salt
