For the tikka marinade

250ml yoghurt
1 lime, juiced and zested
3 tbsp olive oil
4 cloves garlic, finely diced
5cm ginger, peeled and grated
2 tsp spinneysFOOD Fine Cumin
2 tbsp spinneysFOOD Fine Coriander
3 tsp spinneysFOOD Garam Masala Powder
1 tsp spinneysFOOD Fine Turmeric
5 tsp spinneysFOOD Chilli Powder
1tsp spinneysFOOD Salt
500g lamb loin, deboned and cut into 3cm cubes
2 medium courgettes, peeled into ribbons
12 bamboo skewers, soaked in cold water

For the coriander yoghurt

20g spinneysFOOD Fresh Coriander, finely chopped
125ml double-thick yoghurt
4 tbsp olive oil
1 lime, juiced and zested
2 cloves garlic, crushed
2 tsp apple cider vinegar
A pinch of spinneysFOOD Sea Salt

To serve

1 handful Turkish apricots, chopped

    To make the marinade, place all the ingredients in a bowl, add the lamb and toss to combine

    Cover and allow to marinate in the fridge for at least 3 hours

    Thread the lamb onto the bamboo skewers and intersperse with 3-4 courgette ribbons, simply folded. Alternate each lamb cube with courgette until you have about 3 of each per skewer

    Place a griddle pan over a high heat and brush with some olive oil. Grill the kebabs for 6-8 minutes on each side. Set aside to rest

    Combine all the coriander yoghurt ingredients together and season well

    Serve the kebabs with coriander yoghurt and the Turkish apricots
