INGREDIENTS

1kg ripe strawberries, rinsed and hulled
100g spinneysFOOD Extra Fine Caster Sugar
1 vanilla pod, seeds removed
½ tsp spinneysFOOD Sea Salt

METHOD

    Preheat the oven to 200°C, gas mark 6

  • 2

    Halve some of the strawberries and leave the rest whole

  • 3

    Combine the sugar, vanilla seeds and salt together and coat the strawberries

  • 4

    On a non-reactive baking sheet, spread the strawberries in an even layer and add the vanilla pod

  • 5

    Roast the strawberries in the oven for 40-45 minutes, shaking the tray (not stirring) every few minutes

  • 6

    Allow to cool, then store in an airtight container in the fridge

  • 7

    Serve over ice cream or spooned over coconut yoghurt
