INGREDIENTS

For the pistachio dukkah

25g pistachios, toasted
2 tbsp spinneysFOOD White Sesame Seeds, toasted
1 tbsp black sesame seeds
2 tsp spinneysFOOD Cumin Seeds, toasted
1 tsp spinneysFOOD Coriander Seeds, toasted
A pinch of spinneysFOOD Sea Salt and spinneysFOOD Black Pepper, to taste
1 small watermelon, peeled
200g firm feta, crumbled
spinneysFOOD Fresh Mint, to serve

METHOD

    To make the pistachio dukkah, add all the ingredients to a food processor and pulse until they are uniform in size

  • 2

    To make the watermelon kebabs, soak the skewers in cold water until you are ready to serve

  • 3

    Slice the watermelon into 4cm cubes and thread onto two skewers

  • 4

    Heat a griddle pan until smoking, then place the skewers on the grill

  • 5

    Grill for 2 minutes on each side or until griddle line markings form

  • 6

    Serve the watermelon skewers with a sprinkle of dukkah, crumbled feta and mint leaves
