Za'atar-Spiced Labneh

500g Greek-style yoghurt
A pinch of spinneysFOOD Salt
Squeeze of lemon juice
4 tbsp good-quality extra virgin olive oil
spinneysFOOD Za’atar, to serve
Seed crackers, to serve

    Line a strainer or sieve with thin cheesecloth or muslin (coffee filters also work well) and place it over a bowl

    Combine the yoghurt, salt and lemon juice and pour into the muslin. Cover completely and refrigerate for 24 hours then change the muslin for a clean cloth and refrigerate for another 12 hours – it should be nice and thick

    Serve the labneh in a bowl with a drizzle of olive oil, za’atar and crackers
