2 aubergines, thickly sliced
1½ tbsp olive oil, plus more for drizzling
spinneysFOOD Salt, for seasoning
400g fresh cherry tomatoes
1 x 400g spinneysFOOD Chopped Italian Tomatoes
2 baby leeks, finely sliced
spinneysFOOD Pepper, for seasoning
70g breadcrumbs
1 clove garlic, crushed
1 tbsp fresh herbs, chopped
120g mozzarella, torn
spinneysFOOD Fresh Parsley, chopped, for garnishing

    Heat a large griddle or frying pan

  • 2

    Brush the slices of aubergine with olive oil and season well with salt

  • 3

    Once the pan is smoking, place the slices on the pan and fry for 10-15 minutes or until charred and cooked through. Turn over and repeat on the other side

    Take off the heat and set aside

  • 5

    In the same pan, fry the cherry tomatoes in a glug of olive oil for 10 minutes or until blistered

    Preheat the oven to 200°C, gas mark 6

  • 7

    In a large roasting dish, combine the Italian tomatoes and leeks and season well with salt and pepper

  • 8

    Top with the aubergine and drizzle with olive oil, the breadcrumbs, garlic, herbs and mozzarella in a bowl.

    Cook in the oven for 30 minutes or until the aubergines are tender

  • 10

    While the aubergines are roasting, combine the breadcrumbs, garlic, herbs and mozzarella in a bowl

    Sprinkle the breadcrumb mixture over the aubergines and increase the oven temperature to 220°C (fan-forced), gas mark 7. Roast for a further 15 minutes or until golden and the cheese has melted

    Serve garnished with the parsley
