2 large oranges, zested and peeled
2 mandarins, zested and peeled
4 baby leeks, halved
1 tbsp red grape vinegar
spinneysFOOD Salt, for seasoning
spinneysFOOD Black Pepper, for seasoning
¼ cup extra virgin olive oil
100g black and green olives
100g toasted hazelnuts, chopped

    Cut the orange and mandarin into rounds

    Brush the leeks with olive oil and season well

  • 3

    Heat a griddle pan to smoking hot and char the leeks, about 5 minutes a side

    In the meantime, combine the red grape vinegar, seasoning and olive oil – whisk to combine

    Arrange the orange, mandarin and leeks on a plate, dot with the olives, sprinkle the hazelnuts over and drizzle with the dressing
