Filipino Chicken Adobo

A family favourite in the Philippines, this soya-sauce-based dish is the perfect complement to freshly steamed rice

185ml apple cider vinegar
80ml light soya sauce
55g brown sugar, firmly packed
¼ tsp spinneysFOOD Whole Black Pepper, freshly ground
2 bay leaves
1 tbsp fresh ginger, finely grated
6 garlic cloves, finely chopped
12 chicken drumsticks
2 baby leeks, finely sliced
1 tbsp olive oil
4 tbsp spinneysFOOD Bottled Water

    Whisk the vinegar, soya sauce, sugar, pepper, bay leaves, ginger and half of the garlic in a glass or ceramic bowl

    Add the chicken and stir to coat. Cover with plastic wrap and place in the fridge for 30 minutes to marinate

    In a large pot or pan, sauté the sliced leeks in olive oil then add the marinated chicken along with water. Bring the chicken to a boil over high heat. Lower the heat, cover and simmer for 30 minutes, stirring occasionally

    Remove the lid and simmer until the sauce is reduced and thickened, and the chicken is tender in about 20 more minutes. Serve hot with steamed rice
