INGREDIENTS

250g cherry tomatoes, halved
150g mushrooms, sliced
2 x 400g store-bought puff pastry
6 large eggs
6 sprigs spinneysFOOD Fresh Thyme
spinneysFOOD Baked Beans, to serve

METHOD

    Place a large frying pan over a high heat and sauté the cherry tomatoes and mushrooms together, season with salt and pepper and set aside

    Preheat the oven to 180°C, gas mark 4

  • 3

    Unroll the puff pastry onto a floured surface. Cut out 6x15cm squares of puff pastry. Using a small paring knife score a 10cm square in the middle. Brush the border with some water and fold the border over to form a pocket in the centre. Prick the base of the pastry and bake in the oven for 10-15 minutes

    Crack the egg in the middle and arrange the tomatoes and mushrooms over

    Place a sprig of thyme on top and bake for 20-30 minutes or until the pastry is golden and the egg is cooked

    Serve immediately
