Masala Scrambled Eggs

INGREDIENTS

4 tbsp olive oil
3 large onions, chopped
2 spinneysFOOD Tomatoes, chopped
½ tsp turmeric powder
½ tsp cumin powder
1.5 tsp coriander powder
6 spinneysFOOD Organic Free-Range Eggs, lightly whisked
Pinch of spinneysFOOD Salt
Micro herbs to garnish
Toasted country bread

METHOD

  • 1

    Heat the olive oil in a frying pan and cook the chopped onions for about 10 minutes, until they become soft and translucent

  • 2

    Add the chopped tomatoes to the pan and cook for a further 2 minutes

  • 3

    Add the turmeric, cumin and coriander power

  • 4

    Add the eggs and season with sea salt

  • 5

    Continuously stir the mixture with a wooden spoon for about 5 minutes, keeping it moving until the eggs are cooked through

  • 6

    Garnish with micro herbs and serve with toasted country bread
