1 vanilla pod, seeded
500ml double thick Greek-style yoghurt
100g fresh mandarins, peeled and chopped (or you can use a mix of chopped fresh fruit)
125g coconut sugar or unrefined muscovado sugar

    Stir the vanilla seeds into the double thick yoghurt

    Divide the fruit between 2 oven-proof glasses

  • 3

    Sprinkle a generous layer of coconut or muscovado sugar over the yoghurt and brûlée with a blow torch or under a preheated grill until crisp and caramelised

    Serve immediately


Use any flavoured yoghurt to change up the flavours in the brûlée. You can also add your favourite seasonal fruit to this dessert.
