INGREDIENTS

100g ricotta cheese
Pinch of chilli flakes
70g baby spinach, torn into small pieces
Zest of 1 lemon
spinneysFOOD Salt
spinneysFOOD Whole Black Pepper, freshly ground
4 large eggs

METHOD

    Preheat the oven to 180°C, gas mark 4

  • 2

    Mix together the ricotta, chilli flakes, spinach, zest and seasoning and divide between 2 small ramekins

  • 3

    Crack 2 eggs into the top of each ramekin

  • 4

    Bake for 15 minutes and serve immediately
