INGREDIENTS

125g cherry tomatoes on the vine
2 tbsp olive oil
2 cloves garlic
4 sweet potatoes, peeled and grated
2 leeks, thinly sliced
2 tbsp rice flour
¾ cup chickpea flour
¾ cup spinneysFOOD Bottled Water
2 tsp spinneysFOOD Salt
2 tsp olive oil, plus extra for frying
Baby spinach leaves, to garnish

METHOD

    Preheat the oven to 200°C, gas mark 6

  • 2

    Combine the cherry tomatoes, olive oil and garlic in a large roasting dish. Season well and roast for 20-30 minutes or until blistered and caramelised

  • 3

    Place the sweet potato, leeks, rice flour, chickpea flour, water, salt and olive oil in a large bowl and mix to combine

  • 4

    Heat the oil in a large non-stick frying pan over medium heat. Add the sweet potato mixture, flatten and cook for 6-8 minutes

  • 5

    Carefully turn out, return to the pan and cook on the other side for a further 6-8 minutes or until golden brown and cooked through

    Remove from the pan and serve with roasted cherry tomatoes, baby spinach leaves and a drizzle of olive oil
