INGREDIENTS

2 tbsp olive oil
½ white onion, sliced
1 garlic clove, crushed
1 tomato. sliced
100ml tomato purée
3 eggs
spinneysFOOD Salt
spinneysFOOD Black Pepper
A handful of spinneysFOOD Fresh Coriander

METHOD

    Heat the oil in a small frying pan and add the sliced the onion, garlic, tomato slices and tomato purée. Sauté until soft

  • 2

    Once ready, make three pockets and gently crack in the eggs

  • 3

    Season with salt and pepper and cover with the lid until the eggs are cooked to your liking

  • 4

    To serve, place the eggs on serving dish and garnish with fresh coriander leaves
