INGREDIENTS

For the coconut cookies

4 large spinneysFOOD Organic Free Range
Eggs whites only
125g spinneysFOOD Caster Sugar
300g shredded coconut
A pinch of spinneysFOOD Salt
10 drops vanilla essence
100g pistachios
100g rice flour

For the pineapple smoothie

120g pineapple, frozen
120g mango, frozen
80g banana
80ml coconut powder
2g dried lime
Water, as required
Papaya
Mango
Dried cranberries
Cocoa nibs

METHOD

    Preheat the oven to 140°C, gas mark 1

  • 2

    To make the coconut cookies, whisk the egg whites in a mixer, gradually adding the sugar until stiff peaks are formed. Add the remaining ingredients and mix until combined. Roll the cookie mix between two pieces of baking paper using a rolling pin until around 3mm thick

    Remove the top sheet and bake until golden brown, for about 20 minutes. Remove from oven and cut into your desired shapes before the cookie mix cools

    For the smoothie, place all the ingredients in a blender and blitz until combined and a smooth texture is achieved

    Scoop the smoothie mix into your desired bowl, then serve with cookies and garnishing items as you please
