PEA, MINT & AVOCADO SOUP

A delicious and nutritious cold soup that can be thrown together with three main ingredients

INGREDIENTS

30ml salted butter
1 shallot, finely chopped
750ml vegetable stock
500g frozen peas, thawed
4-6 sprigs of mint leaves, picked
2 Hass avocados
spinneysFOOD Salt, to taste
spinneysFOOD Pepper, to taste
4 tbsp double cream
spinneysFOOD Baby Beetroots, thinly sliced for garnishing
spinneysFOOD Micro Greens, for garnishing

METHOD

    Sauté the shallot in the butter until soft. Add the vegetable stock and set aside to cool slightly

  • 2

    Once cooled to room temperature, add the peas, mint and avocados and blend until smooth

  • 3

    Season with salt and pepper

  • 4

    Refrigerate until ready to serve

  • 5

    Serve with a dollop of double cream, and garnish with baby beetroots and micro greens
