2 tbsp olive oil
1 garlic clove, crushed
2 tsp Cajun rub
4 spinneysFOOD Chicken Breast Fillets
spinneysFOOD Salt, to taste
spinneysFOOD Fine Pepper, to taste
8 ripe apricots, pitted and halved
200g halloumi, cut into slices

For the apricot vinaigrette

4 overripe apricots, halved and pitted
4 tbsp olive oil
4 tbsp lemon juice
2 tsp Dijon mustard
2 tsp spinneysFOOD Honey
1 clove garlic, crushed
spinneysFOOD Salt, to taste
spinneysFOOD Fine Pepper, to taste

For the salad

100g rocket
100g spring onions, chopped
spinneysFOOD Fresh Basil, plus extra for garnishing

    Mix together 1 tbsp of the olive oil, garlic and Cajun rub, and rub into the chicken fillets. Leave to marinate for about 30 minutes

    Heat a griddle pan on medium heat until hot and cook the chicken on both sides for about 15 minutes or until cooked and charred, turning once or twice. Remove from the pan, season with salt and pepper, and keep aside

    Brush the rest of the olive oil on the apricots (cut side) and grill them on the hot griddle pan until charred and cooked – it will take about 3 minutes. Remove and keep aside

    Heat a non-stick frying pan and fry the halloumi slices on both sides until golden brown

    For the vinaigrette, combine all the ingredients in a blender and blitz until smooth. Strain through a sieve and adjust the seasoning

    For the salad, add the rocket to a bowl along with the spring onions and basil leaves and toss. Divide amongst 4 plates

  • 7

    Slice the chicken fillets into strips and add to the salad

  • 8

    Top with the cooked halloumi and grilled apricots

  • 9

    Drizzle with the vinaigrette and garnish with fresh basil
