1 Thumb-sized piece of ginger, peeled and finely grated
1tsp Sesame oil
2tbsp spinneysFOOD Honey
20 Carrots, peeled and tops trimmed
spinneysFOOD Salt and Black Pepper, to taste
Sesame seeds, to garnish

    Whisk together the ginger, oil and honey. Season well

    Place the carrots and ginger mixture in a large frying pan with the star anise and simmer, with the lid on, for 10 minutes or until the carrots just start to turn tender

    Remove the lid, increase the heat to high and simmer, stirring occasionally to coat the carrots until coated in a thick glaze

    Serve immediately, sprinkled with sesame seeds
