INGREDIENTS

Almond paste (see below)
1 jar of mincemeat
4-6 individual sweet pastry cases
1 small bag of almond flakes
spinneysFOOD Super Fine Icing Sugar, for dusting, optional

For the almond paste

250g unsalted butter
250g spinneysFOOD Caster Sugar
250g ground almonds
5 spinneysFOOD Organic Free Range Eggs

METHOD

  • 1

    Blitz the almond paste ingredients together in a food processor until fully combined

  • 2

    Preheat the oven to 180˚C, gas mark 4

  • 3

    Place a tbsp of mincemeat in each of the pastry cases; spread the almond paste on top, finishing with almond flakes

  • 4

    Bake in the oven for 10-12 minutes, or until golden brown

  • 5

    Dust with icing sugar before serving, if using
