INGREDIENTS

Small Brussels sprouts
Knobs of butter
spinneysFOOD Salt, to taste
spinneysFOOD Pepper, to taste
Sesame seeds, toasted to golden brown

METHOD

    Bring a large pot of salted water to the boil

  • 2

    Remove any damaged outside leaves and insert a criss-cross incision into the base stalk of each sprout

  • 3

    Add the sprouts to the boiling water and cook for 2-3 minutes or until just tender. This will maintain their rich, green colour

  • 4

    Once cooked, refresh immediately in iced water, not allowing the Brussels sprouts to sit too long and become waterlogged. 5 Drain the sprouts and dry before seasoning with salt and pepper

    Then microwave them with a knob or two of butter

  • 6

    Once the Brussels sprouts are hot, finish with a sprinkling of toasted sesame seeds

NOTES

These Brussels sprouts can easily be microwaved or reheated for a few minutes in rapidly simmering water on the day of your party. If your sprouts are large, halve each one once they are refreshed in iced water. This will reduce their reheating time.
