INGREDIENTS

100g Spinneys Extra Mature Cheddar, finely grated
75g Parmesan, finely grated
100g unsalted butter
120g spinneysFOOD All-Purpose Flour
½ tsp spinneysFOOD Salt
1 tsp sugar
Pinch of cayenne pepper
Pinch of baking powder
3 egg yolks (60g pasteurised egg yolk)
Milk
Somerset Cheddar, finely grated for sprinkling

METHOD

    Preheat the oven to 200˚C, gas mark 6

  • 2

    Pulse all the dry ingredients with the butter and cheese in a blender to a crumble texture

    Add the egg yolks to form a dough

  • 4

    Roll the dough into an approx. 6cm-diameter cylinder, wrap in cling-film and refrigerate until firm

  • 5

    Once set and firm, cut 5mm discs from the cylinder and place on parchment-paper-lined baking trays

  • 6

    Brush each disc with a little milk and sprinkle the discs with grated Cheddar before baking in the oven for 8-10 minutes
