INGREDIENTS

3 apples, peeled, cored and chopped
100g spinneysFOOD Dates, pitted and roughly chopped
75g demerara sugar
1 tsp mixed spice
¼ tsp spinneysFOOD Salt
2 tbsp apple vinegar
1 tbsp chives, chopped

METHOD

  • 1

    Place all the ingredients, except the chives, in a saucepan; bring to a simmer, cover with a lid. Stir occasionally until the apples have softened

  • 2

    Replace the lid and continue to rapidly simmer, allowing any remaining liquid to reduce to a syrupy consistency

  • 3

    Once cooked, leave the compote to cool
