1 handful dried apricots (or dried figs), sliced
1 handful pistachios, lightly toasted
2-3 tbsp mascarpone
1 generous slice of Brie

    Cut the dried apricots into thin pieces so that you don’t have to chew them too much. Set aside in a bowl

    Chop the pistachios into slivers. Put them into the bowl of sliced apricots. Try to balance the ratio of dried fruit to nuts

    Add the mascarpone to the bowl. Mix it well with the dried fruit and nuts

    Cut the slice of Brie in half horizontally

  • 5

    Spread a thick layer of the mascarpone paste on one half and top it with the other half
