Zesty Prawn Cocktail

Dubai-based Alison enjoys cooking during the week, preferring to stay out of her gorgeous kitchen on weekends, when her husband, who is a former chef, takes over. Here she shares one her favourite festive starters

What changes have you made to the traditional prawn cocktail recipe?
I’m not fond of the traditional Thousand Island dressing, so I use home-made mayonnaise. My husband loves prawn cocktail, it reminds him of the ’80s. But I’ve made it more modern by adding lime and chilli to it.    

Where did you get this recipe from?
I go online quite a bit, but I don’t like sticking to one recipe, so I've mixed and matched and come up with my own.

For the lime mayonnaise

4 tbsp mayonnaise (store bought/home-made or half-half mix of yoghurt and mayonnaise)
1 tbsp lime juice
¼ tsp cayenne pepper
¼ tsp chilli powder
spinneysFOOD Sea Salt, to taste
2 deseeded red chillies, finely sliced
Zest of 1 lime (reserve some for garnish)

For the garnish

Red chillies, finely sliced
Zest of lime

    Poach deveined and de-shelled prawns for 2 minutes in boiling water

    Drain prawns and immediately put on ice to prevent further cooking

    To prepare the lime mayonnaise, put all the ingredients into a mixing bowl (saving 1 chilli and some zest for garnish). Mix everything well. If it’s a bit too tart, add more mayonnaise

    Reserve a whole prawn for each person. Chop each of the remaining prawns into 3 pieces

    Add 1 tbsp of the mayonnaise mix to the chopped prawns. Keep adding mayonnaise until all the prawns are generously coated
