INGREDIENTS

1kg chicken thighs, boneless, skinless
120g spinneysFOOD Mini Peppers
120g spinneysFOOD Organic Plum Cherry Tomatoes, or Tamatim Tasties tomatoes
2 garlic bulbs, halved
2 tbsp spinneysFOOD Chicken Spice
balsamic vinegar
2 tbsp olive oil
spinneysFOOD Salt, as needed
spinneysFOOD Black Pepper, as needed
spinneysFOOD Fresh Coriander

METHOD

    Preheat the oven to 180°C/Gas mark 4

    Combine all ingredients on a large baking tray

    Bake in the oven for 25-30 minutes

    Garnish with coriander
