On medium heat sauté the onion, garlic and ginger in a frying pan until soft and fragrant
Add the cumin, coriander, chilli flakes and tomatoes and cook for 5 minutes until the tomatoes are soft
Top and tail the okra and cut into large chunks. Add the okra to the pan and cook for 5 minutes until the okra is soft
Squeeze over with lime and garnish with coriander. Serve immediately.
