1 tbsp olive oil
1 brown onion, finely chopped
2 cloves, minced
3cm piece spinneysFOOD Organic Ginger
1 tsp spinneysFOOD Ground Cumin
1 tsp spinneysFOOD Ground Coriander
1 tsp chilli flakes
2 spinneysFOOD Organic Tomatoes, diced small
200g spinneysFOOD Organic Okra Juice of 1 lime
spinneysFOOD Fresh Coriander, to garnish

    On medium heat sauté the onion, garlic and ginger in a frying pan until soft and fragrant

    Add the cumin, coriander, chilli flakes and tomatoes and cook for 5 minutes until the tomatoes are soft

  • 3

    Top and tail the okra and cut into large chunks. Add the okra to the pan and cook for 5 minutes until the okra is soft

  • 4

    Squeeze over with lime and garnish with coriander. Serve immediately.
