INGREDIENTS

1 large cauliflower, cut into florets
60ml olive oil
1 tsp spinneysFOOD Paprika
1 tsp spinneysFOOD Cayenne pepper
2 tsp spinneysFOOD Turmeric
1 tbsp spinneysFOOD Fennel seeds
2 tsp spinneysFOOD Ground Coriander
2 tsp spinneysFOOD Ground Cumin
4 tbsp slivered almonds
4 tbsp dried cranberries
spinneysFOOD Fresh Mint Leaves, as needed

METHOD

    Combine the cauliflower florets, olive oil and all the spices in a large baking tray. Toss to cover the cauliflower with the spices

    Bake at 180°C/gas mark 4 for 20 minutes. 3 Slightly toast the almonds in a frying pan

  • 3

    Remove the cauliflower from the oven transfer to a serving dish and top with the almonds and cranberries
