INGREDIENTS

500g Tamatim Tasties tomatoes, halved
1 tsp sumac
10g spinneysFOOD Parsley Leaves
15g spinneysFOOD Fresh Mint Leaves
75ml pomegranate seeds
½ red onion, sliced
2 tbsp balsamic reduction
spinneysFOOD Salt, as needed
spinneysFOOD Black Pepper, as needed
4 tbsp pine nuts, toasted

METHOD

    Combine all the ingredients in a large bowl, mixing lightly until the tomatoes are well coated. Season to taste

    Transfer to a serving bowl or platter and garnish with the pine nuts

    This salad can be kept in an airtight container in the fridge for 1-2 days

NOTES

Keep Tamatim Tasties at room temperature, not in the fridge. They’re a tropical fruit and taste even better when they aren’t served cold.
