INGREDIENTS

200g Tamatim Tasties tomatoes, divided
1 small red onion, cut into chunks
1 spinneysFOOD Organic Local Cucumber
2 spinneysFOOD Naturally I’mperfect Red Peppers, divided
1 clove of garlic
4 tbsp spinneysFOOD Fresh Parsley Leaves
4 tbsp fresh basil
2 tbsp apple cider vinegar
3 tbsp olive oil
Juice of 1 lemon
2 tsp green tabasco
spinneysFOOD Salt, as needed
spinneysFOOD Black pepper, as needed
2 tbsp balsamic reduction
spinneysFOOD Micro Greens, as needed

METHOD

  • 1

    In a blender, combine all ingredients except the balsamic reduction, 50g of the tomatoes and ¼ of the red peppers.

    Blend all the ingredients to a chunky liquid consistency.

  • 3

    Finely chop the remaining tomatoes and peppers.

  • 4

    Pour the gazpacho into serving bowls and garnish with the finely chopped tomatoes, peppers and micro greens.

    Serve cold or at room temperature.
