INGREDIENTS

1kg potatoes
300g cottage cheese
50g corn flour
100g gram (chickpea) flour, roasted
20g spinneysFOOD Salt
10g white pepper
2 tbsp coriander leaves, chopped
300g desi ghee, plus extra for frying
10g cumin seeds
1 tsp ginger, minced
20g fresh green chillies, chopped
150g green peas
Yoghurt, to serve
Tamarind, to serve
Chutney, to serve

METHOD

    Wash, boil, cool, peel, and grate potatoes. Set aside

  • 2

    Crumble the cottage cheese into small particles, then mix with potatoes

  • 3

    Add corn flour, roasted gram flour, salt, white pepper powder, chopped coriander leaves, and desi ghee. Mix well and set aside

    Heat ghee in a pan; crackle the cumin and sauté the ginger and green chilli. Add green peas and cook well. Remove from heat, and let cool

    Divide mixture into 12 equal portions and shape each into a round tikki

  • 6

    Heat ghee in a pan and shallow-fry tikkis until golden-brown and crispy. Serve with yoghurt, tamarind, and chutney
