Zaatar-sumac chicken and pine nut finger sandwiches

Ingredients

  • 100ml crème fraîche
  • 100g mayonnaise
  • 1½ tbsp zaatar
  • 1 tsp sumac
  • zest of 1 lemon, plus 1 tsp juice
  • 1 rotisserie chicken (from the deli), meat shredded
  • 80g pine nuts, toasted
  • 2 tbsp finely chopped parsley
  • 6 slices spinneysFOOD Wholemeal Bread
  • 4 slices spinneysFOOD White Bread

Method

  1. Combine the crème fraîche, mayonnaise, zaatar, sumac, lemon zest and juice in a small bowl. Season then stir in the shredded chicken, pine nuts and chopped parsley.
  2. Divide two-thirds of the filling between 3 wholemeal slices. Top with the remaining wholemeal slices, remove the crusts and cut each square into 4 fingers. Repeat with the white bread and remaining filling.
