Zaatar-sumac chicken and pine nut finger sandwiches

100ml crème fraîche
1½ tbsp zaatar
1 tsp sumac
zest of 1 lemon, plus 1 tsp juice
1 rotisserie chicken (from the deli), meat shredded
80g pine nuts, toasted
2 tbsp finely chopped parsley
6 slices spinneysFOOD Wholemeal Bread
4 slices spinneysFOOD White Bread
Combine the crème fraîche, mayonnaise, zaatar, sumac, lemon zest and juice in a small bowl. Season then stir in the shredded chicken, pine nuts and chopped parsley.
Divide two-thirds of the filling between 3 wholemeal slices. Top with the remaining wholemeal slices, remove the crusts and cut each square into 4 fingers. Repeat with the white bread and remaining filling.
