Tortellini with tomato sauce

Serves: 4 Prepare & Cook:


  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 2 x 400g cans spinneysFOOD Chopped Italian Tomatoes with Herbs
  • 1 tbsp Tomato Paste
  • 1 tbsp spinneysFOOD Freeze Dried Mixed Herbs
  • ½ tsp spinneysFOOD Freeze Dried Oregano
  • pinch brown sugar
  • 2 x 420g packs fresh store-bought tortellini
  • 2 tbsp grated parmesan, to garnish
  • basil leaves, to garnish


  1. Set a saucepan with the olive oil over a medium heat. Fry the onion for 10 minutes, or until soft and translucent.
  2. Add the garlic, fry for 1 minute more, then stir in the tomatoes, paste, dried herbs and sugar. Season, bring to the boil, then reduce the heat to medium-low. Simmer for 30 minutes.
  3. Cook the pasta according to pack instructions. Drain and stir through the sauce to coat.
  4. Serve the tortellini in warm bowls and garnish with the grated parmesan and basil leaves.

Top Tip

Adding a little sugar to canned tomatoes rounds out the flavours and balances acidity.
