Strawberry, raspberry, cucumber, avocado and mint salad

Serves: 4 Prepare & Cook:


  • 1 tbsp SpinneysFood Caster Sugar
  • 3 tbsp lemon juice
  • 5 SpinneysFood Mint sprigs, leaves picked and chopped
  • 500g strawberries, hulled and halved
  • 170g SpinneysFood Raspberries
  • 1 SpinneysFood Organic Cucumber, peeled into ribbons
  • 1 avocado, sliced


  1. In a bowl, combine the sugar, lemon juice and chopped mint.
  2. Add the strawberries and raspberries and toss to combine.
  3. Divide among four plates, layering with the cucumber and avocado. Spoon over any remaining dressing and serve.
