- 1 tbsp spinneysFOOD Caster Sugar
- 3 tbsp lemon juice
- 5 spinneysFOOD Mint sprigs, leaves picked and chopped
- 500g strawberries, hulled and halved
- 170g spinneysFOOD Raspberries
- 1 spinneysFOOD Organic Cucumber, peeled into ribbons
- 1 avocado, sliced
- In a bowl, combine the sugar, lemon juice and chopped mint.
- Add the strawberries and raspberries and toss to combine.
- Divide among four plates, layering with the cucumber and avocado. Spoon over any remaining dressing and serve.
