In a bowl, stir together the almonds, oats and 200ml almond milk. Transfer to the fridge to soak overnight.
The next morning, put the almond mixture, 100ml almond milk, the honey and strawberries in a blender. Grate the apple and slice the banana. Add to the blender and blitz until smooth, loosening with a little more almond milk if necessary.
To serve, pour the smoothie into two large glasses (or four small ones) and garnish with muesli and extra strawberries, if you like.
