In a medium bowl, combine the flour, 2 tsp salt, the sugar and yeast. Add the vegetable oil and bring the mixture together with your hands. Gradually add 225ml warm water and bring the mixture together to form a dough. Knead for 5-10 minutes until you have a smooth, elastic dough. Cover with cling film and set aside for 30 minutes.
Preheat the oven to 200°C, gas mark 6. Squeeze the spinach to remove excess liquid. Put in a bowl; add onions, spring onions, paprika, sumac, oil and lemon juice. Season.
Shape the dough into 18-20 balls, roll out to 4mm thick and put 2 tsp filling in the middle of each. Bring the dough together from three sides to form a triangle. Seal with a little water.
Bake for 10-15 minutes, until golden. Serve warm, with lemon slices and mint leaves, if you like.
