- 2 tbsp olive oil
- 2 garlic cloves, chopped
- 2 x 400g cans chopped tomatoes
- ½ tsp caster sugar, or to taste
- 4-6 fresh basil leaves or ½ tsp dried basil
- Heat the oil in a large saucepan over a medium heat. Add the garlic and cook for 2-3 minutes until it starts to turn a pale golden colour.
- Add the tomatoes, caster sugar and basil. Season and bring to the boil. Stir well, reduce the heat and cover with a lid. Simmer gently, stirring occasionally, for 25-30 minutes.
