- 4 spinneysFOOD Free Range Eggs, yolks only
- 200g spinneysFOOD Caster Sugar
- 180ml fresh grapefruit juice
- 75g butter
- Whisk the egg yolks, sugar and grapefruit juice together in a saucepan. Set over a medium-low heat and continue to whisk for 12-15 minutes, or until thickened.
- Beat in the butter then set aside to cool. Transfer to a sterilised airtight container and store in the fridge.
