Grapefruit curd

Makes: 300ml Prepare & Cook:

Ingredients

  • 4 spinneysFOOD Free Range Eggs, yolks only
  • 200g spinneysFOOD Caster Sugar
  • 180ml fresh grapefruit juice
  • 75g butter

Method

  1. Whisk the egg yolks, sugar and grapefruit juice together in a saucepan. Set over a medium-low heat and continue to whisk for 12-15 minutes, or until thickened.
  2. Beat in the butter then set aside to cool. Transfer to a sterilised airtight container and store in the fridge.
