Chilli and lime-marinated mango with mint sugar

Serves: 2 Prepare & Cook:


  • 1 red chilli, deseeded and finely chopped
  • zest and juice of 1 lime
  • 2 Alphonso mangoes, thinly sliced
  • 5 mint leaves, finely chopped
  • 1 tbsp spinneysFOOD Caster Sugar


  1. Put the chilli, lime zest and juice in a bowl. Stir to combine, add the mango and turn to coat.
  2. Pound the mint leaves and sugar in a mortar and pestle until well combined and the sugar begins to turn green.
  3. Divide the mango slices between two plates and sprinkle over the mint sugar.

Top Tip

Mangoes are fantastic with zesty lime. Try blitzing with yogurt and lime juice to make a creamy smoothie.
