Having grown up in California, Brambles founder and head chef Mandana Shabani was massively influenced by the local food culture. At 33 she quit her job in fashion and earned a culinary degree from the French Culinary Institute in New York. She moved to Dubai a few years ago by chance and everything fell into place from there. Brambles is a happy, friendly place with pretty interiors, “I just woke up one day and decided it was going to be pink,” says Mandana with a laugh.
When asked to choose her favourite dish from the menu, Mandana said “I’ve been eating here for a year and I am still not sick of it. I love the avo pizza.” With a creamy avocado base topped with finely sliced jalapenos, fresh radish, pickled onions, and white and black sesame seeds, this version of the popular Italian classic is zingy and fresh and complete without cheese. The kale, sumac and cauliflower rice salad with cranberry dressing is bright, with flavours that pack a punch. It’s the ideal option as a side to a main protein dish. Round off your meal with the riri, one of the signature hot drinks on the menu, crafted from coconut milk, hot chocolate and coconut flakes. If you do want to end your meal on a sweet note, head to the counter for a selection of freshly baked cakes, muffins, cookies and brownies.
